60x40cm Sheet Pan Bakery Shelving — Adjustable Stainless Tiers, Flour Wipes Off in One Pass
This shelving is built around one number: 600 × 400 mm. That is the European bakery tray — the same module your deck oven, your proofer and your delivery crates already run on. Levels take the pan flat, with no overhang at the back. Tier height moves, so one rack handles a stack of flat trays on Monday and proving baskets on Tuesday. And because the surface is bare stainless with no paint and no coating, flour comes off with a single damp pass instead of a scrub brush.
Luoyang Hengna Office Furniture Co., Ltd. builds this bakery shelving to the 600×400 module rather than trimming a general-purpose rack to fit. CE certified, ships knock-down, 2026 specification.
Start with the tray, not the shelf
Most shelving is sold by height and width. Bakeries do not buy that way. Your trays are a fixed 600 × 400 mm, and everything they touch is built on the same module.
Get the depth wrong and the cost shows up daily. Too shallow, and pans hang over the front lip, catch on the way out and tip. Too deep, and trays disappear into a dark gap at the back where flour sits until somebody finds it during an inspection. So the question worth asking a supplier is not "how tall is the unit" — it is "does a 60x40 pan sit fully supported, and can someone reach the back tray without lifting the front one out first?"
One thing to check before ordering: 600 × 400 is the European standard. US full-size sheet pans run 18 × 26 inches (roughly 460 × 660 mm) and will not sit crosswise on a 60x40 level. If your kitchen runs US pans, say so up front — the levels get cut to your tray, not the other way round.

Why adjustable tiers earn their keep
A bakery rarely bakes one thing. Flat trays of rolls need roughly 80-100 mm of clear height. A proving basket holding a dough ball wants 200-250 mm. Sheet pans under a proving cloth sit somewhere in between.
On fixed shelving you build for the worst case — the tallest thing you make all year — then pay for empty air above everything else, every day. Adjustable levels let you set the rack tight for a tray run and open one level up when the baskets come out. Across a four-tier unit, that is usually the difference between storing eight trays and storing twelve.
Flour: where painted and plated racks fail
Flour itself is not what ruins a rack. It is what flour mixes with.
Painted steel. Fine for the first few weeks. Then a tray edge chips the coating at the shelf lip, and you are wiping grey flakes off a surface that sits centimetres from dough.
Chrome-plated wire. The plating pits first at the welds. Flour and humidity pack into the pit, and it becomes a spot that never quite dries.
Wood. Holds flour in the grain. In a humid dough room it holds water too, which is the part inspectors write down.
Bare stainless has no coating to chip. Corners on these units are finished smooth instead of left as a sharp 90° seam, so flour does not pack into a corner and set.
The cleaning sequence behind the "one pass" claim, and the one professional bakeries actually use:
Brush or vacuum the dry flour first. A wet cloth on dry flour makes paste, and paste is what needs scrubbing.
One damp pass with a food-safe cloth. That covers daily flour.
Wash down at the end of the shift, not the start — the surface dries on its own overnight.
Knock-down, and what it does to your freight
A welded four-tier rack ships as a welded box. You pay for the air inside it. Flat-packed, the same rack travels as a stack of posts and shelves, and volumetric weight drops enough to change what a 40HQ costs you.
Assembly uses butterfly clips — shelves drop onto the posts and lock. No screws, no loose hardware to lose on site, no tools. Two people can have a unit standing in the time it takes to unbox it.
201 or 304: which one
| 201 stainless | 304 stainless | |
|---|---|---|
| Dry storage room | Fine | Fine |
| Humid dough room | Surface marks over time | Holds up |
| Daily wash-down | Needs drying after | Handles it |
| Cost | Lower | Higher |
| Typical buyer | Dry goods, packaging, tray storage | Dough rooms, wash-down areas, food-contact specs |
Where this rack fits, and where it does not
Good fit:
In-store supermarket bakeries
Hotel and restaurant kitchens
Central production kitchens and commissaries
Pastry and cake shops
Bakery chains kitting out new sites
Not the right product:
Racks that need to move from oven to chiller — that is a rolling speed rack, not static shelving
US 18 × 26 in pans — order the levels cut to that size instead
Sacked flour and ingredient storage — a higher-load warehouse rack is the better buy
Five things to confirm before you order
Tray size, and whether pans sit lengthwise or crosswise on the level
Clear height on the tallest level — measure the proving basket, not the tray
201 or 304 (see the table above)
The route, not just the corner. Measure the aisle from oven to rack; a unit that fits the corner but blocks the walkway gets moved on day two
Whether it needs anchoring — tall units in a busy kitchen should be fixed to the wall
FAQ
What is the MOQ?
It depends on the specification. Stocked sizes go out in smaller quantities; custom sizes are run at container level. Send the size and quantity and we will confirm.
How fast do I get a quote?
Within 24 hours, with a drawing if the size is custom.
Do you handle FOB and CIF?
Both, from main Chinese ports. EXW if you run your own forwarder.
What is the warranty?
One year. If a part fails through manufacturing, send photos and we ship a replacement.
Can I put my own brand on it?
Yes — silk-screen logo on the posts, custom cartons, custom manuals and custom sizes. The packing line is set up for OEM orders.
What is the lead time?
Stocked specifications are typically a few weeks. Custom runs depend on order size, and your quote carries a firm date.
How is it packed?
Moisture film, corner protectors, and each part packed separately so steel does not rub steel in transit. Export cartons, palletised on request.
